Homemade Mixes

Hello Friends!

  Its been a couple weeks and I've been formulating my next steps in this journey... I've been asked by several people about homemade mixes and recipes using those mixes... so today, I'm sharing one standby and recipes for that mix.  In the next week, I'll be sharing other baking mixes as well as spice mixes to prepare and have handy in your pantry!   Having mixes ready cuts prep time and is more economical than buying the same mixes at the store.  Enjoy!

B-Qwick Mix
*************
8 cups flour
1 1/4 cups dry milk powder
1/4 cup baking powder
1 TB salt
2 cups vegetable shortening

Mix dry ingredients and cut shortening into mix until completely blended.  Store in an airtight container in a cool and dry place.

Biscuits

2 cups mix
1/2 cup water
2 T melted butter

Preheat oven to 450*.  Blend mix and water until mix is moistened.  Knead on floured surface gently approx 10 turns. Roll to 1/2" thick.  Cut out biscuits and put on ungreased baking sheet.  Brush with melted butter and bake 8-10 minutes.  Makes about 8 biscuits.

Pancakes
*********
2 cups mix
1 egg
1/2 cup water
1/2 cup buttermilk

Mix all ingredients just until combined.  Let sit 10 minutes before cooking on hot griddle.  Makes 12-15 pancakes.

Chocolate Chip Cookies

3/4 cup softened butter
2 1/2 cups brown sugar
3 eggs
4 cups mix
1/2 cup oatmeal
1/2 cup white chocolate or butterscotch chips
1 bag semi sweet chocolate chips

Preheat oven 325*.  Cream butter, eggs and sugar.  Blend in remaining ingredients.  Drop by teaspoonful 2" apart onto an ungreased cookie sheet.  Bake 12-15 minutes until light brown.  Makes approx. 4 dozen cookies.
